Sopi Di Yuwana (Iguana Soup)

You probably won’t find Iguana meat in your local super market. You will have to aquire them yourself or from a friend. Kill, clean, skin and cut the Iguana into serving pieces. For more information on Iguana preparation check out the Iguana page link at the left.

Green Iguana


The Green Iguana is a large South American vegetarian lizard. It is fast becoming a common site (some would say pest) in the Florida Keys. Since they are exotics they are not protected. Just be careful since hunting with firearms in the Keys is not legal, and you would not want to be accused of animal cruelty. Also, they have sharp claws and strong jaws. Anyway if you happen to have an Iguana ready to become a feast click on the Recipe Category Iguana and try one of the recipes.

Since Iguana meat is not available in the local markets you will need to know,

How to Prepare Iguana:
Skin and clean the iguana in the way that you skin and clean a chicken. Remove the head, organs and entrails. If you don’t want to skin the iguana then simply dip it in hot water and then scrape the scales off the lizard as you do with a fish.
